Egg Nog is a very popular drink this time of year, and also very high in calories and fat. 1 cup of traditional egg nog is about 343 calories, 19 grams of fat and 21 grams of sugar, and this nutritional breakdown is without rum!
Here is my low fat, low sugar version of egg nog.
1/2 cup rapadura sugar
1/2 to 1 tbsp cinnamon
1/4 tsp nutmeg
4 cups low fat milk, divided
4 egg whites
2 tsp vanilla extract
Combine dry ingredients in medium mixing bowl. Add eggs and egg whites and beat together with wire whisk or electric mixer, about 4 minutes or until frothy and light. Warm low fat milk over low heat in medium saucepan. When hot, gradually add egg mixture stirring constantly, and
continue to heat until consistency begins to change and thicken. Stir in vanilla and remove from heat. Allow to cool slightly before mixing in remainder of low fat milk. Cover and chill. Tastes delicious on its own!
This recipe get very thick, so you may need to add extra milk once its cooled down over night.
