High Protein Gluten Free Waffles


I love discovering natural and healthy ways to eat our favorite foods.  I decided to try making waffles with coconut flour and it turned out quite well!

Here is a little info on coconut flour…


Coconut flour contains almost double the amount of fiber found in wheat bran.

Fiber has numerous health benefits, from reducing the absorption of sugar into the blood stream, to lowering cholesterol.

According to a recent studies, adding coconut flour to your food intake can significantly reduce your cholesterol levels.

Coconut flour also helps reduce the risk of developing certain diseases like heart disease, diabetes and certain types of cancer. Coconut flour is also high in protein!

Ingredients:

  • 2 tbsp coconut flour
  • 1 tbsp cocoa(optional if you want a little chocolate taste)
  • 1/2 scoop vanilla or chocolate gluten free protein powder
  • 1/2 tsp cinnamon
  • 1-2 scoops or packages stevia
  • 3/4 cup egg whites
  • 1 tsp coconut oil

Preheat waffle iron. In a bowl whisk ingredients together until mixed well. Spray waffle iron with non-stick spray. Pour batter in and cook for 2-4 minutes depending on how crispy you want your waffles. Top with berries or topping of your choice. Makes 2-4 waffles depending on your waffle iron.
