Apple Lentil Muffins

A healthy muffin recipe for everyone in your family to enjoy, secret ingredient…lentils! No one will even know!


  • 1 cup (250 mL) canned red or yellow lentils
  • 1 1/2 cups (350 mL) oat flour
  • 1/4 cup (60 mL) ground flaxseed
  • 2 tsp (10 mL) baking powder
  • 1 tsp (5 mL) baking soda
  • 1 tsp (5 mL) cinnamon
  • ½ tsp vanilla
  • 4 egg whites
  • Stevia or splenda to taste
  • 1/2 cup (60 mL) apple sauce
  • 1 cup about 2 small apples (350 mL) apple, grated
  • 1 cup hemp milk, rice milk or almond milk
  • ½ cup raisins(optional)

Preheat oven to 350 F (180 C).

Mash lentils in a large bowl until smooth.

In large bowl, combine flour, flaxseed, baking powder, baking soda, vanilla and cinnamon. Add egg whites, sweetener, milk, apple sauce  and apples to lentil puree and mix well.

Combine wet and dry ingredients and mix just until all the flour is incorporated. Divide mixture among 12 greased muffin cups and bake for 20 minutes, or until golden and a toothpick inserted into the middle of a muffin comes out clean.


Makes 12 muffins.

124 calories each, 19.7 grams carbs, 8g protein, 1.9g fat, 6.7g fiber
