This is a delicious low calorie cake made with all natural ingredients. Freezes well and ideal with a coffee for morning or afternoon tea.

Makes 12 slices of Healthy Carrot Cake…

Delicious with a cuppa for a morning or afternoon snack


  • 2 cups fine rolled oats
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/8 tsp nutmeg
  • 50g walnut pieces + 25g for top of cake
  • 350g carrots (approximately 2 large)
  • 6 large / 180ml egg whites
  • 2 whole eggs
  • 125g low fat vanilla or natural yoghurt
  • 1 tsp vanilla essence
  • 100g finely chopped dates (I use kitchen scissors)

1. Preheat oven to 180 degrees.
2. Mix dry ingredients together in a large bowl.
3. Peel and grate the carrots.
4. Blend the egg whites, eggs, yoghurt and vanilla essence in a jug
5. Slowly add liquid to the dry ingredients, along with grated carrot
and dates and stir gently to combine.
5. Pour batter into a shallow, non-stick cake pan – silicon is ideal.
6. Top with remaining walnut pieces and lightly dust with cinnamon.
7. Bake for approximately 35-40 minutes, or when an inserted
toothpick or skewer comes out clean.
8. Allow to sit for about 5 minutes before turning onto a wire rack
to cool, then cut into slices.
